- Chicken Breasts: Ideally, grab some organic/free range chicken breasts if you’re able to. However, any chicken breast will work well with this recipe!
- Brown Sugar: You can use light or dark brown sugar. Note that dark brown sugar will lend a much more noticeable flavor.
- Seasonings: Paprika and garlic powder are all you need to keep your flavor palate here simple, yet so bold.
- Fresh Herbs: Thyme and rosemary create the best herbaceous note in this easy chicken breast recipe.
- Olive Oil: You can use avocado oil instead if preferred.
PRO TIP: If you’re all out of brown sugar, you can make your own by simply combining one cup of white granulated sugar with one tablespoon of molasses!

How to Freeze
In the freezer, store cooled chicken breasts in an airtight container for up to 6 months. I recommend wrapping each breast in wax paper before freezing for easy portioning.

Ingredients
- 2 chicken breasts
- 1 ½ tablespoons brown sugar
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- 1 teaspoon fresh thyme
- 1 teaspoon fresh rosemary
- 1 tablespoon extra virgin olive oil
Instructions
Preheat oven at 350℉.
In a medium sized bowl, add brown sugar, paprika, garlic powder, thyme, and rosemary. Mix well.

Drizzle olive oil over chicken breasts to coat evenly.
2 chicken breasts, 1 tablespoon extra virgin olive oil
Add chicken breasts to the bowl with the spice mixture, and evenly coat the chicken breasts.
Line a sheet pan with parchment paper.
Add seasoned chicken breast to the sheet pan, and bake in the oven for 30 minutes, or until chicken is fully cooked through to an internal temperature of 165℉.
Slice chicken breasts and enjoy!

Storage: Store baked chicken breasts in an airtight container in the refrigerator for 3 days, or freeze for 3 months.

I have made a similar recipe but it didn’t have Rose merry or Thyme in it. However, one trick I found that always made it juicy was to put the chicken on a wire rack that is on top of a cake pan or whatever oven used pan. Put water in the pan and turn the chicken every 5-10 minutes.Anyways, this went really well with garlic and rosemary baked potatoes.
