We love making homemade pretzels, the big ones, but there is something extra fun and special about the bites. They are the perfect party food! The pretzels are soft, chewy, salty, and so good dipped in cheese sauce!

We get a lot of questions about the baking soda in the recipe. There is a ⅓ cup, yes a ⅓ cup, but the baking soda doesn’t go IN the pretzels. It is for boiling the pretzels in water. Make sure you add the baking soda VERY slowly because it will bubble up. We don’t want anyone to get burnt.

Homemade Soft Pretzel Bites are fun to make and fun to eat! Make them for your next party or game day! Your guests will have so much fun dipping and snacking! Enjoy!

Ingredients

Soft Pretzels:

For the cheese sauce:

Instructions

  • For the Pretzels: Combine the 1 ½ cups water, sugar, yeast, and butter in the bowl of a stand mixer and mix with the dough hook until combined. Let sit for 5 minutes.

  • Add the salt and flour and mix on low speed until combined. Increase the speed to medium and continue kneading until the dough is smooth and begins to pull away from the side of the bowl, about 3 to 4 minutes. If the dough appears too wet, add additional flour, 1 tablespoon at a time. Remove the dough from the bowl, place on a flat surface and knead into a ball with your hands.

  • Oil a bowl with vegetable oil, add the dough and turn to coat with the oil. Cover with a clean towel or plastic wrap and place in a warm spot until the dough doubles in size, about 1 hour.

  • Preheat the oven to 425 degrees F.

  • Bring the 3 quarts of water to a boil in a small roasting pan over high heat and carefully add the baking soda. It will boil over, so add slowly and be careful!

  • Remove the dough from the bowl and place on a flat surface. Divide the dough into 8 equal pieces, about 4 ¼ to 4 ½ ounces each. Roll each piece into a long rope measuring 22 inches and shape. Cut the dough into one inch pieces to make the pretzel bites. Boil the pretzel bites in the water solution in batches. We did about 15 bites at a time. Boil for about 30 seconds. Remove with a large slotted spoon. Place pretzel bites on a baking sheet that has been sprayed with cooking spray. Make sure they are not touching. Brush the tops with the egg wash and season liberally with the salt. Place into the oven and bake for 15 to 18 minutes until golden brown.

  • Remove to a baking rack and let rest 5 minutes before eating. Serve with cheese sauce.

To make the cheese sauce:

  • Melt the butter in a medium saucepan over medium heat. Add the flour and cook 1 minute. Whisk in the milk and cook until slightly thickened. Remove from heat and stir in the Cheddar cheese until smooth and all of the cheese is melted. Season with salt and pepper, to taste.

Notes

*If you want to make cinnamon and sugar pretzel bites-instead of adding salt, sprinkle the bites with cinnamon and sugar. For the frosting mix-soft cream cheese-about 3 T, powdered sugar, a teaspoon of vanilla extract, and a little bit of milk. Whisk together. Add more milk if it is too thick, if it is too thin, add more powdered sugar. I don't measure. I just guess until the consistency is right.*

Fine sea salt – This is for the dough. Pretzel salt – This is for sprinkling on the pretzels before baking. I'd highly recommend ordering the pretzel salt for the most impressive pretzels possible and best flavor. If that's not an option, use coarse sea salt instead.

What kind of salt is used on soft pretzels? ›

Pretzel salt—explained

Pretzel salt is a type of coarse long-grained salt. It is typically uniform in size with a flat, rectangular shape. These characteristics are what make them so good for pretzels as well as other types of baked goods.

What is the secret ingredient which makes a pretzel taste like a pretzel? ›

Malt Syrup (the kind used for beer) and dipping them in a hot alkaline solution (baking soda or food grade lye and hot water) after baking for about 20–30 seconds gives a pretzel its characteristic flavor and distinctive brown coloring. The alkaline solution is a big contributor to the pretzel flavor.

Does Auntie Anne's use lye or baking soda? ›

Well, the cheery ladies were very clear with me: they do NOT use lye. No sodium hydroxide/poison/caustic soda—none whatsoever—in their pretzels. (They do, however, dip their pretzels in a baking soda solution.)

Does Auntie Anne's put butter on their pretzels? ›

Our Original Pretzel only contains 5 grams of fat, and, yes, it is lightly dipped in butter. Since Auntie Anne's Pretzels are made fresh in our stores, you can request your pretzel without butter for a lower calorie option or order your pretzel without salt.

How do you keep soft pretzels from getting hard? ›

Room Temperature: The best way to store your pretzels at room temperature is by using a bread box. Bread boxes let the right amount of air circulate so your bread (or pretzels!) remain moisture-free without going stale. If you don't have a bread box, you can opt for a paper bag or a storage container.

Are soft pretzels junk food? ›

Pretzels may be better than some fatty chips, but four out of five nutrition experts surveyed by Time say if you're trying to eat healthy, pretzels shouldn't be your go-to snack. Although pretzels are low-fat, they are also pretty paltry on the protein and fiber front, and they can be quite high in sodium and carbs.

How do you store homemade pretzel bites? ›

Let pretzel bites cool completely. Place them on a baking sheet so they are not touching and freeze until solid, about 1 hour (this flash freezing prevents them from sticking to each other). Place in a large freezer bag or smaller plastic bags for individual servings. Freeze for up to 3 months.

Should homemade soft pretzels be refrigerated? ›

Pretzels are best when eaten fresh and hot, but will still be good for up to a day later. Store them in a paper bag at room temperature.

How long do homemade soft pretzels last? ›

If desired, you can cover and refrigerate the boiled/unbaked pretzels for up to 24 hours before baking in step 7. Bake for 12-15 minutes or until golden brown. Remove from the oven and serve warm with spicy nacho cheese sauce. Cover and store leftover pretzels at room temperature for up to 3 days.

Can you leave soft pretzels out overnight? ›

Note, however, that storing soft pretzels on the counter at room temperature is not an indefinite solution. Even when stored properly, the pretzels will no longer be fresh after 1 to 2 days and may become spoiled and unsafe to eat thereafter.

How do you keep salt on homemade pretzels? ›

The moisture from the baking soda solution will help the salt adhere to the pretzels, keeping the seasoning in place even as the dough bakes. With a baking soda solution, you'll keep your pretzel salted and your taste buds happy.

How do you get toppings to stick to pretzels? ›

Freshly baked pretzels can be brushed or dunked in melted butter before topping (the butter will help the toppings to stick). Sprinkle over cinnamon sugar, or a blend of spices and grated dry cheese (such as Parmigiano-Reggiano).

Do you put salt on pretzels before or after baking? ›

Brush with egg and sprinkle with salt: Once all the pretzels have been dipped in the water bath, brush them with the egg and water mixture and sprinkle them with salt. Bake the pretzels: Bake the pretzels until they are deep brown and glossy, 12 to 15 minutes. Cool and eat!

Why does salt melt on pretzels? ›

Pretzel products naturally have moisture in them and that moisture causes the pretzel salt to melt. While the pretzel is perfectly safe to eat and will retain the salted flavor, this melting will cause the pretzel product to appear wrinkled and may get a slightly wet feel to it.
